If I'm not mistaken, M.2 is the form factor, NVME is the interface. For as far as I know, Apple uses AHCI with their SSDs but I think there is support for NVME starting with High Sierra, if I'm not mistaken. And they don't use the M.2 form factor (that's why you need an adapter). But yeah...in theory it might work.
However, please, keep in mind that you're doing this at your own risk. Personally I never tried that, and I would probably go for an official Apple proprietary SSD instead (even if that's more expensive), just to make sure it works for sure.
But if you wanna try it...and since for as far as I can see, you've already done some research on this matter, it's your machine, you can do with it whatever you see fit. :) And, just for my curiosity, I'd be very interested to know if that actually worked for you. :)
